Red Velvet Cheesecake Cake

This post has been sitting here waiting for me to post for awhile. One night while I was looking though my google reader, Matt noticed and picture and said I had to make this tonight. Well I read though the recipe and while it looked great, it was complex and it involved a layered cake something I have never tackled before. With some encouragement from my husband, we found our way to Publix to pick up the ingredients that we didn't have at home. Once we got home I set out some of the cheesecake ingredients to come to room temp. and said a prayer. Not only I was attempting a layered cake for the first time but also real cheesecake and homemade red velvet cake and homemade icing. Well you could use a box mix for the cake or icing. I was surprised with how much lighter and yummy the homemade cake tasted, so it was worth the effort to me. Now I don't want to scare anyone away from this, really nothing is that hard in the recipe just lots of steps and kinda time consuming. I found it worked out nicely to make the cheesecake the night before and then just make the cakes and icing the day of.
  Now I know this is getting long for me, but I had a major meltdown when trying to get the cheesecake out of the pan after it had chilled overnight. I didn't have a spring form pan so I decided to just make do with a cake pan, well it didn't go so well. When i flipped the pan over the cheesecake broke into a million pieces, but I managed to put it back together and all was fine.

Ohio Part 2

I might be a little late, but here comes the second installment of our trip to Ohio. We got to visit family, which is always fun. We didn't get to spend as much time with everyone as I wished, but we got to see lots of people. While I will admit I am nervous about moving back in August, getting to see everyone and visit with my mom made me feel kinda excited to be closer to everyone. Of course now I need my sister and her hsuband to move, which is never going to happen. I am going to miss living so close to her!!! It was so much fun to get to see and play with Drake on this visit. He is getting so big and has such a great personality. So as you can guess most of this post will be of the little man himself, I took tons of pictures telling myself that since he is the third baby in his family there most likely isn't as many pictures of him as his sisters. So here goes the pictures, those of you who are my Facebook friend may have seen the unedited versions of these since I accidentally uploaded the wrong version. Yeah I know way to go!!

Ohio (Part 1)

This past week-end we made a trip to Ohio, and it was packed full of a million things. We had Faith and Dan's Wedding, trying to find a place to live, I had to go meet with Beavercreek Schools, and trying to hang out with family somewhere within there. We left at 5:45 on Friday and got very little sleep the whole week-end, but it was fun and so worth it. We didn't really find a place to live, but we threw a bunch of places out. I took tons of pictures this week-end but I think for this post I will just show everyone a few wedding pictures,and save the family pictures for tomorrow's post.

It's Been Awhile

So I promised a post after the week-end to ATL, but life got crazy busy!! I started a class that is packed into three weeks, so that keeps me busy most days. I already have another trip to write about, but lets look at the trip to ATL. It was great to see Dad since it had been awhile, and we really enjoyed our week-end together. We got to eat some food, do some shopping, and see somethings in downtown. I didn't take as many pictures as I had planned, but we got a few good ones. Hopefully I will start to feel better this week, and will fill everyone on our quick trip to Ohio!

Finals Week

Finals week is finally here, and well maybe it is the way grad. school works but last week was ten times crazier than this week. I have two more finals to take tomorrow then I am finished for a whole week. But lets not talk about that, rather lets talk about last week-end. Matt decided to go to the shooting range to shoot his new gun, and he decided that I need to know how to use a gun. Yeah you heard me right, me with a gun (scary, I know)!!! I was scared to death to fire a gun and didn't want to hurt someone, even though everyone told me the gun doesn't kick back I didn't believe them. Well I think I will let the pictures do the talking from here. One of my friends Jenna and her boyfriend went with us, and Jenna took the pictures of me.

So there is it, our Saturday afternoon at the range. I only shot the gun once, but now that I have had to process it and realize it wasn't that bad, I wouldn't mind to try it again sometime. And no one was harmed either so don't worry!! Now back to studying aphasia and fluency. At least I just have to get though tomorrow around 5:45 then we will be on the road to Atlanta to see my Dad so watch out next week-end for many pictures from our trip.
